Part Three After collecting a few fabulous recipes from restaurant chefs during business trips over the last couple of years, it occurred to me that we should share these exceptional low carb dishes with all of you. We began running them two issues ago and were surprised at how popular they have been! So we've gathered more, and we hope you enjoy these! |
Place soy flour in a small bowl and whisk egg in another small bowl. Finely grind macadamia nuts in food processor. Transfer to bowl. Season fish with salt and pepper. Coat each piece of fish with soy flour, then egg, then nut mixture coating completely. Heat 3 tablespoons oil in a heavy saute pan. Brown 3 pieces of fish about 2 minutes per side. Transfer to a parchment lined baking sheet. Repeat with remaining fish. Bake fish until opaque in center about 7 minutes. Serve with Pineapple Coconut Butter Sauce (recipe below.) Cook spinach. Drain well (squeezing out excess moisture.) Combine browned onion, spinach, salt, pepper, nutmeg, cayenne, and cream cheese in a shallow, 1 1/2-quart, heat-resistant, non-metallic casserole. Add cream over top and lightly mix in. Heat, uncovered, in microwave 5 to 6 minutes or until heated through. Makes 4 servings �� 3.8 grams of carbohydrate per serving. |
