      Low Carb Recipes from America's Famous Restaurants

Part Three

After collecting a few fabulous recipes from restaurant chefs during business trips over the last couple of years, it occurred to me that we should share these exceptional low carb dishes with all of you. We began running them two issues ago and were surprised at how popular they have been! So we've gathered more, and we hope you enjoy these!

Macadamia Nut Crusted Pacific Red Snapper
with Pineapple Coconut Butter Sauce


  • 1/2 cup soy flour
  • 2 large eggs
  • 3 cups macadamia nuts
  • 6  6-oz Pacific Red Snapper fillets
  • 6 Tablespoons macadamia nut oil (or olive oil)
Pre-heat oven to 350�F.

Place soy flour in a small bowl and whisk egg in another small bowl. Finely grind macadamia nuts in food processor. Transfer to bowl.

Season fish with salt and pepper. Coat each piece of fish with soy flour, then egg, then nut mixture coating completely.

Heat 3 tablespoons oil in a heavy saute pan. Brown 3 pieces of fish about 2 minutes per side. Transfer to a parchment lined baking sheet. Repeat with remaining fish. Bake fish until opaque in center about 7 minutes. Serve with Pineapple Coconut Butter Sauce (recipe below.)

Pineapple Coconut Butter Sauce

  • 1/2 cup melted, unsalted butter
  • 1 Egg Yolk
  • 1 Tablespoon unsweetened grated or flaked coconut
  • 1 packet Splenda
  • 1 teaspoon sugar free Pineapple Preserves
Whisk egg yolk quickly into warm (not hot) melted butter. Make sure yolk is fully incorporated. Stir in remainder of ingredients and heat butter sauce until just short of boiling (do not let it come to a boil.) Keep warm and serve over snapper filets.

Serves 3 �� 7.9 grams of carbohydrate per serving (2-filet serving with sauce.)

Ruth's Chris Creamed Spinach


  • 1/4 cup Butter
  • 2 Tablespoons Finely grated onion
  • 20 oz Frozen chopped spinach
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Pepper
  • 1/4 teaspoon Nutmeg
  • Dash of cayenne
  • 6 oz Cream cheese, at room temperature
  • 1/2 cup Heavy Cream
In a small heat-resistant, non-metallic bowl melt butter in Microwave for 30 seconds. Add onions and heat, uncovered, in microwave for 1 minute or until onion is lightly browned. Stir occasionally.

Cook spinach. Drain well (squeezing out excess moisture.) Combine browned onion, spinach, salt, pepper, nutmeg, cayenne, and cream cheese in a shallow, 1 1/2-quart, heat-resistant, non-metallic casserole. Add cream over top and lightly mix in. Heat, uncovered, in microwave 5 to 6 minutes or until heated through.

Makes 4 servings �� 3.8 grams of carbohydrate per serving.

  • 1 1/2 cups light olive oil
  • 3/4 cup white wine vinegar
  • Juice of 1/2 lemon
  • 1/2 cup grated Parmesan Cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1 clove garlic - chopped fine
Combine all ingredients and mix well. Allow to sit for 2 hours before serving for optimal flavor.

1 gram carbohydrate per 2-Tablespoon serving.
