Less Than Irish...

For those who are in the mood for something besides Irish fare, here is a quick and easy recipe I "borrowed" from the manuscript of Cooking TLC: Volume II....


Truly Low Carb's Glazed Chicken Stix

  • 2 lb. boneless chicken breast, cut into thin strips
  • 4 Tablespoons soy sauce
  • 2 Tablespoons natural peanut butter
  • 2 Tablespoons olive oil
  • 2 Tablespoons Splenda
  • 1 teaspoon ground ginger
    (or 1 Tablespoon grated fresh gingerroot)
Truly Low Carb's Glazed Chicken Stix Mix everything together and allow it all to marinate while coming to room temperature, for twenty minutes. Line a shallow pan with aluminum foil and broil, close to heat source, turning once, until meat is crispy and done throughout.

Serve hot or cold, with toothpicks. I like to use this identical method for cooking additional meat strips in "plain old" Italian dressing, as well a mixture of equal amounts of hot wing sauce and butter. The three different colors and flavors look, taste, and serve great together, and the no-clean-up part doesn�t hurt my feelings at all!

Also delicious made with turkey or other poultry or even lamb and beef.

Truly Low Carb's Smokey Beef Brisket

Truly Low Carb's Smokey Beef Brisket
  • 2 to 3 lb. beef brisket
  • 1 Tablespoon onion flakes
  • 1/3 cup liquid smoke
  • 1 teaspoon minced garlic
  • heavy duty aluminum cooking bag

Place brisket fat side up in cooking bag, or fashion your own out of triple layers of heavy-duty foil. Mix onion flakes, garlic, and liquid smoke, and pour over roast. Seal cooking bag tightly, place on a baking sheet, and bake at 325 degrees F for 2-3 hours. Scrape off fat layer and slice thinly, across the grain. Serve with real horseradish. Again: no clean up required!

Real Horseradish

  • Fresh horseradish root
    (available at many grocers, look near the gingerroot)
  • White vinegar
  • Turnips (optional)
Real Horseradish Peel horseradish and grind it into a bowl of white vinegar. Pack mixture into jars tightly, including enough vinegar to cover horseradish completely, and leaving a half inch of headroom. If it is too hot for you as-is, add some grated turnip to cut the heat. Add to sour cream to taste, for use as a dipping sauce.

The root itself is practically carbless, so just keep track of what you cut or mix it with to determine your carb count.
