Sautéed Zucchini
|
Ingredients:
- 1/2 small onion, sliced
- 1 pound mushrooms, sliced
- 5-6 zucchini, sliced
- 2 Tablespoons butter
- seasonings to taste (Mrs. Dash, Lawry's, or Spike all work great!)
- 1 cup mozzarella cheese, grated or shredded
Sauté onions and mushrooms in butter until tender. Add zucchini and cook
just until tender — don't overcook! Sprinkle with seasoning; stir to mix well and,
while still in frying pan, top with mozzarella cheese. When cheese is melted,
serve immediately! This is a superb side-dish to steaks.
Makes 8 Servings. 3.5 net grams of carbohydrate per serving.
