Low Carb Luxury Recipe!
Sautéed Zucchini

  • 1/2 small onion, sliced
  • 1 pound mushrooms, sliced
  • 5-6 zucchini, sliced
  • 2 Tablespoons butter
  • seasonings to taste (Mrs. Dash, Lawry's, or Spike all work great!)
  • 1 cup mozzarella cheese, grated or shredded

Sauté onions and mushrooms in butter until tender. Add zucchini and cook just until tender — don't overcook! Sprinkle with seasoning; stir to mix well and, while still in frying pan, top with mozzarella cheese. When cheese is melted, serve immediately! This is a superb side-dish to steaks.

Makes 8 Servings.   3.5 net grams of carbohydrate per serving.
