Mediterranean Island Pizza
|
Reminder:
This is a Specialty Ingredient Recipe.
It requires pre-packaged items as outlined
below.

Ingredients:
- 2 prepared Keto Pizza Dough pizza crusts
- Olive oil
- 1/2 cup Peloponnese® sweet pepper spread
- 4 cups fresh spinach leaves, thinly sliced
- 4 roasted sweet peppers, cut into thin strips
- 1/2 cup pitted kalamata or ripe olives, quartered
- 1 (13.75-ounce) can marinated artichoke hearts, drained and coarsely chopped
- 1/2 cup crumbled tomato basil flavored feta cheese
Prepare 2 Keto Pizza Dough pizza crusts according to package directions.
Prepare grill (if grilling) or heat oven to 400°F.
Grill or bake pizza crust for 3 minutes or until slightly puffed and golden brown.
Brush crust with a small amount of olive oil and 1/4 cup of the roasted sweet pepper
spread or pizza sauce, followed by half of the spinach, roasted red peppers, artichokes
and olives. Cover pizza and grill for 3-4 minutes or until topping ingredients are hot.
(If baking, allow an additional 3 minutes.) Before serving, sprinkle pizza with 1/4 cup
of the crumbled feta cheese. Repeat with remaining crust and toppings.
Serves 6 - 5.5 net grams of carbohydrate per serving.
