Low Carb Luxury Recipe!
Family Style Mashed "Potatoes"

  • 1 fresh head of cauliflower
  • 1 cup Dixie Diner Mashers Potato Mix
  • Faux Mashed Potatoes
  • 1/4 cup sour cream
  • 1/2 cup cream cheese
  • 4 Tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1 egg yolk
  • 1/4 cup chopped fresh basil, cilantro, or parsley
  • 1 teaspoon chicken stock seasoning (optional)

Place cauliflower in large pot of water. Bring to boil over high heat; reduce heat, partially cover, and simmer 15 to 20 minutes until very tender. Drain extremely well.

In a small microwave safe bowl, add cream cheese and butter and heat in microwave 30-40 seconds to slightly melt.

Place in cauliflower food processor bowl. Add in sour cream, cream chese-butter mixture, onion powder, salt, and pepper. Add egg yolk and pulse until well mixed. Add in Dixie Diner Mashers Potato dry mix and pulse until fluffy. (If mixture is too dry, a teaspoon or two of heavy cream will fix this.) Add basil, and chicken stock seasoning (if using). Mix well. Serve with low-carb gravy or with additional butter.

Serves 8.   3 net grams of carbohydrate per serving.
