Caroline's "Forgotten" Cookies

These cookies are so called because they must sit in an undisturbed oven overnight.

Ingredients:
- 4 Tablespoons Expert Foods' Wise CHOice Mousse Mix
- 1/2 cup Splenda
- 1 teaspoon Vanilla extract
- 7 1/2 Tablespoons water
- 1/2 ounce sugar free chocolate chips
- 1 ounce chopped pecans
Preheat oven to 350°F.
Making sure your mixer, beater and bowl are grease-free,
place the scant half cup of water in a one-quart glass
or metal mixing bowl and add Wise CHOice Mousse Mix
and sweetener. Using an electric mixer on low,
mix until powder is dissolved. Scrape down sides of
bowl then whip on highuntil foam fills the bowl at
least halfway and stands in peaks (2 to 4 minutes).
Whip for an extra minute. Add vanilla and continue to
whip until you can hold the bowl upside down without
the foam moving.
Carefully fold in chocolate chips and nuts. Spoon out
rounded tablespoons of batter onto a parchment paper-lined cookie sheet. Place in preheated 350°F. oven
for 2 minutes, then turn the oven off and leave in the
oven overnight without opening the door (no peeking!).
Peel cooled cookies carefully off parchment paper and
store in airtight container.
Makes 15-20 cookies depending on the size you make.
Carb count varies depending on what you add. The base, assuming
the use of liquid sweeteners is only a tiny trace of carbs. If you
use granulated Splenda (at 12 grams per 1/2 cup), add pecans
and low-carb chips, your total for the base would be about 18 grams
making the cookies about 1 gram each. So, this is one where you
have to add up your total carbs in the recipe, divide by the number of
cookies you get and there's your carb count. :)
