Hawaiian Tropics Muffins
|
Reminder:
This is a Specialty Ingredient Recipe.
It requires pre-packaged items as outlined
below.

Ingredients:
- 2/3 cup oil
- 1/3 cup heavy cream
- 3 eggs
- 1 Tablespoon liquid sweetener
- 4 Tablespoons Splenda
- 2 Tablespoons oat flour
- 2 Tablespoons high gluten flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/4 cup finely chopped english walnuts or macadamia nuts
- 1 1/4 cups Soy Pro Banana Flavored Protein Powder
- 4 Tablespoons Jok n Al's Pineapple Coconut Macadamia Topping
- 1 teaspoon vanilla extract
- 1/2 teaspoon pineapple extract
- 1/2 teaspoon banana extract
- 1/2 cup Davinci syrup (Macadamia Nut or Vanilla)
Preheat oven to 350°F. Oil 2 muffin tins (the kind that hold 6 muffins each.)
Combine all dry ingredients in a large mixing bowl and whisk until well mixed.
Add remainder of ingredients and beat to mix well.
Pour into muffin tins and bake for 10-15 minutes (watch carefully - ovens vary!)
Makes 12 muffins. 4.5 carbs per muffin.
