  Low Carb Luxury Recipe!

Pecan Turtles
Reminder: This is a Specialty Ingredient Recipe.
It requires pre-packaged items as outlined below.

Ricci Taffy Chews and Darrell Lea Chocolate Bars are available

Ingredients:
  • 1 bar Darrell Lea Sugar Free Chocolate
  • 6 Ricci Caramel Taffy Chews
  • 12 pecan halves*
  • broken pecan pieces

Cover a microwave safe plate with a waxed paper or cooking parchment sheet and set aside. Break Darrell Lea chocolate bar into pieces and place in a small Pyrex bowl to soften to semi-liquid state in the microwave. Spoon 6 even little "blobs" onto the waxed paper, leaving at least 1/2" between each one. Lay one caramel taffy atop each chocolate blob and return to microwave for a few seconds to soften taffy. Place 2 pecan halves at an angle on each softened caramel and press down a bit so the taffy "squishes" up over the pecans a little. Then spoon remaining chocolate evenly over each candy. If chocolate has hardened up enough to hold a hard shape, you may need to re-soften a bit in microwave again. Finally sprinkle a bit of broken pecan bits over the top and press into the chocolate to "glue" them down. Cool and enjoy. Refrigerate any that last more than 12 hours. (If any do!)

Makes 6 turtle candies. 1.5 grams per candy.

* Toasted unsalted pecans work best for this recipe, but raw split pecans work also. Just avoid the salted ones.
