Ham and Bean Soup

Ingredients:
- 8 oz cubed ham
- 1/4 cup finely diced celery
- 1 cup water
- 1 cup low-sodium chicken broth
- 1 can Eden Black Soy Beans
- 1/4 cup tiny diced carrot
- 2 teaspoons minced onion
- 1/4 teaspoon minced garlic (optional)
- 1/8 teaspoon Cayenne Pepper
- 1/4 teaspoon Cumin
- 1/4 teaspoon Salt
In a medium sauce pan brown the ham. Add 1 cup of water and scrape
glaze off bottom of pan. Add low-sodium chicken broth.
Drain the water from the can of beans. Add beans to the sauce pan.
Add all other ingredients. Stir. Bring to a boil; turn down
heat and simmer for at least 1 hour to bring out the flavors — the longer,
the better (3+ hours being best.)
Makes 6 servings. 3 net grams of carbohydrate per serving.
