Low Carb Luxury Recipe!
Ham and Bean Soup

  • 8 oz cubed ham
  • 1/4 cup finely diced celery
  • 1 cup water
  • 1 cup low-sodium chicken broth
  • 1 can Eden Black Soy Beans
  • 1/4 cup tiny diced carrot
  • 2 teaspoons minced onion
  • 1/4 teaspoon minced garlic (optional)
  • 1/8 teaspoon Cayenne Pepper
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Salt

Ham & Bean Soup In a medium sauce pan brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth.

Drain the water from the can of beans. Add beans to the sauce pan.

Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors — the longer, the better (3+ hours being best.)

Makes 6 servings.   3 net grams of carbohydrate per serving.
