Green on Green

Ingredients:
- 1 pkg frozen chopped spinach, thawed & drained well
- 2 cups mayonnaise
- 1/4 cup chopped white onion
- 1 small clove garlic, minced
- 1 tbs. lemon juice
- 1 medium cucumber, sliced into round medallions
- ripe olive slices or pimiento for garnish
Put first 5 ingredients in blender at high speed to mix well. Refrigerate at
least 4 hours (overnight is best.) While very cold, form small balls with
spinach mix and place each one on a cucumber medallion. Top with a slice of
ripe olive or pimiento and arrange on serving plate.
Approximately 1 carb per medallion.
