Low Carb Luxury Recipe!

  • 1 7-oz. pkg. of unsweetened grated coconut
  • 1 pkg sugar-free gelatin mix (small box - your flavor choice)
  • 1 cup almond flour/ground almonds
  • 1/2 cup heavy cream
  • 2/3 cup Splenda
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Combine all ingredients. Shape into designs with candy molds (like fruits or veggies etc. - you may add food coloring for truer details if gelatin does not color to preference,) or form into simple circles. Chill until forms hold their shape.

Makes 24 1-inch forms — 5 carbs per piece.
