Johnsonville Sausage gets on the Low Carb bandwagon!


Johnsonville Sausage L.L.C., has developed recipes featuring its Italian sausage that we're sharing here. And their website will soon feature more low-carb recipes using Johnsonville's brat-wurst and breakfast sausage products!



Low Carb Peppers, Sausage & Spaghetti Squash

  • 1 (19.76 ounce pkg.) Johnsonville Sweet Italian Sausage (remove casing, crumble, cook and drain)
  • 2 Tbsp. olive oil
  • 2 Tbsp. garlic
  • 1/2 cup green onion, diced
  • 1½ cups fresh fennel, sliced
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup yellow pepper, diced
  • 1 cup fresh tomatoes, diced
  • 6 Tbsp. cooking Sherry, divided
  • Salt and pepper to taste
Place olive oil into a large pan; add garlic, onion, fennel and peppers, sauté until tender. Add diced tomato and 3 tablespoons of cooking sherry into pan and cook until warm. Combine with sausage mixture, salt and pepper to taste. Blend in 3 additional tablespoons of cooking sherry into mixture prior to serving over spaghetti squash.
Servings 6
Net Carbs per serving: 10 grams
(1 cup sausage mixture with ½ cup cooked spaghetti squash)




Low Carb Italian Sausage Roll

  • 1 (19.76 ounce pkg.) Johnsonville Sweet Italian Sausage (remove casing, crumble, cook and drain)
  • 2 Tbsp. olive oil
  • 1tsp. garlic, minced
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup yellow pepper, diced
  • 1/2 cup fresh spinach, stripped
  • 4 Tbsp. Balsamic Vinegar (divided)
  • Salt and pepper to taste
  • 1½ cups spicy sprouts (or alfalfa sprouts)
Place olive oil into pan; add garlic and peppers sauté until tender. Blend spinach and cooked Italian sausage mixture into peppers and add 2 Tbsp. vinegar. Heat until warm, add salt and pepper to taste. Add final 2 Tbsp of vinegar.

Take one leaf of Napa and slice the base into a point. If Napa leaves are not pliable, microwave for 20 seconds. Top with a 1/4 cup spicy sprouts and 1/2 cup meat mixture and roll up. Repeat until mixture is gone.

Special touches:
Add 1/4 cup rutabaga thinly striped for crunch.
To give the recipe a twist, after cooking the sausage place in the blender and pulse for 3-5 seconds.
Servings 8
Net Carbs per serving: 5 grams
