An area of the Lone Star State that includes the historic cities of San Antonio and
Austin, the Texas Hill Country is known for its beautiful scenery, warm hospitality
and delicious foods. Hill Country fare is predominantly "Tex-Mex" with a strong emphasis
on locally grown vegetables and fruits. Let's take a look at how some classic Texas Hill
Country dishes lend themselves to low carb! Enjoy...

Texas Shrimp Roll-ups
First, prepare Pico de Gallo:
- 1/2 cup chopped ripe tomato
- 1/4 cup chopped onion
- 2 teaspoons chopped jalapeno (more or less to taste)
- 2 tablespoons chopped cilantro
- 1 tablespoon fresh lime juice
Combine all ingredients, mixing gently to combine flavors.
- 1/2 pound cooked shrimp
(small salad shrimp will work well)
- 1 pound cream cheese, at room temperature
- Juice of 2 limes
- 10 LaTortilla Factory low carb tortillas
- Salt and pepper to taste
Using an electric mixer, mix together softened cream cheese and lime juice until incorporated.
Season lightly with salt and pepper. Mix in the cooked shrimp and pico de gallo.
Spread the mixture evenly on the tortillas and roll them up tightly. Wrap the roll-ups and chill overnight.
When ready to serve, slice into one-inch thick slices and arrange on a bed of shredded lettuce.
Makes 10 servings, 6 slices per serving. Per serving: 14g carbohydrate, 8g fiber.

Chili Crusted Turkey Cutlets with Enchilada Sauce
- 1 1/4 pounds turkey cutlets
- 1/2 cup almond flour
- 3 teaspoons chili powder
- 2 tablespoons olive oil
- 1 small can enchilada sauce
- 1/2 cup shredded cheddar cheese
Combine almond meal and chili powder; dip cutlets to coat both sides. Heat olive oil in
large nonstick skillet over high heat until hot; brown cutlets 1 minute on each side.
Pour enchilada sauce over cutlets. Cover and heat for 3 to 4 minutes. Top with cheese; serve.
Makes approximately 5 servings. Per serving: 5g carbohydrate, 1 gram fiber

Spicy Creamed Spinach with Cheddar Cheese
- 10 ounces frozen leaf spinach, thawed and drained
- 2 teaspoons butter
- 1/2 cup finely chopped white onion
- 2 garlic cloves
- whole fresh jalapeno, seeded and chopped
- 1 teaspoon cornstarch
- 1/2 cup chicken broth
- 1/2 cup heavy whipping cream
- 4 ounces shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
In nonstick skillet over medium-high heat, melt butter. Add onion, garlic and jalapenos
and sauté until onions are translucent. Stir in cornstarch and mix well. Add broth and bring
to boil. Add spinach and stir. Add cream and bring to a boil. Lower heat to simmer.
Add cheddar cheese and mix well. Season with salt and pepper.
Makes 4 side dish servings. Per serving: 7g carbohydrate, 3g fiber.

Strawberry Cream Cheese Lone Stars
- 8 ounces cream cheese, softened
- 1/4 cup granulated Splenda
- 1/4 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 18 fresh strawberries
Using an electric mixer, combine cream cheese, Splenda, cinnamon and lemon juice in a mixing bowl
until smooth; cover and refrigerate.
Clean and hull strawberries. Place on a paper towel, open side down and dry thoroughly.
With a small knife, cut an X in each strawberry, starting at the
pointed end and continuing about 3/4 of the way through. Gently open each berry, and using a pastry
bag with a large star tip, pipe the cream cheese filling into the X until berry opens up slightly.
Makes 6 servings (3 berries per serving.) Per serving: 3.5g carbohydrate, 1g fiber.
