With our August 8th issue, we began a new series by
Laura Poole Ruffner. (If the name seems eerily close to my own, it's because Laura is my
daughter-in-law.) Laura is 29 years old and holds a B.A. in Communications from Newberry College. She's also a dedicated low carber (since September 2000) and is an avid Harry Potter fan.
Laura began working on ways to
keep carbs, temptation, and sabotage at bay some time ago. And as she did so, it was quite natural
for her to begin referring to her strategies as her "Defenses against the Dark Arts" which all Potter
fans will relate to. With each issue, "Professor" Laura shares more of her good sense strategies
and have a little magical fun with it at the same time. And so it continues... (insert sound
of ancient
book opening, the pages crackling...)

In this chapter we will look at another aspect of Defense Against the Dark Arts. We will look
at Potions and their impact on helping in your continued combat against "Dark Carbs."
Potion making can be a complicated study, but we'll start slow and make this easy.
To be a proficient Potions Master you must arm yourself with the basic ingredients. With
the proper elements and tools, you can always be prepared for any situation. For many of
us witches and wizards, defending off a sweet tooth can be particularly troublesome.
Let's look at this Potion's ingredients and then prepare the Potion below...
Basic Potion Ingredients:
These items are used in the majority of all potions. I will provide the Muggle translation
for those that need it:

The above Potion Elements are the ingredients used in the Potion below. Having this Potion made at any given time can prevent one from turning to the Dark
Arts to seek sweet tooth craving satisfaction.

Luxofabulosa Crematious Densitovia (Luxurious Cheese Cake)
- 1 cup Powdered Almondona
- 6 Tablespoons Powdered sweet
- 4 Tablespoons Butteronius, melted
- 5 (8-oz) packages Crematious Bovinious, softened
- 1 1/2 cups Powdered Sweet
- 1 Tablespoon Powdered Oatusona
- 1 Tablespoon Essence of Vanilla
- 3 Chicken Orbs
- 1 cup Sournious Creamora
Preheat cauldron (or oven) to 350°F.
Mix the first three ingredients and then press into bottom of springform pan.
Mix Crematious Bovinious, Powdered sweet, Powdered Oatusona and Essence of Vanilla with wand (or an electric mixer) until blended.
Add Chicken Orbs one at a time, mixing on low after each, just until blended. Blend in Sournious Creamora and pour over crust.
Bake 1 hour and 5 minutes to 1 hour and 10 minutes or until center is almost set. Run knife around the rim of the pan to loosen cake and allow to cool before
removing the springform pan ring. Refrigerate overnight.
TOTAL CARBS FOR CAKE: 97.3
Makes 20 wizard-size servings: 4.8 carbs per serving.
