More Great Tips for Your Low Carb Kitchen. . .
"Originality consists not only in doing things differently, but also in doing things better."
— Edward Skedman
If you need a teaspoon or less of lemon juice, prick the lemon with a thumbtack and squeeze
out what you need. Seal the hole by inserting a toothpick.
The safest way to melt chocolate is in a double boiler. If you do not own one, place
chopped chocolate in a heatproof bowl set over a saucepot of simmering water. Water
should not touch the underside of the bowl. The smaller the chocolate is chopped, the
faster it will melt.
Use Atkins or DaVinci sugarfree syrup to sweeten and flavor heavy cream for whipping.
When processing nuts in a food processor to a fine consistency, add a small
amount of low carb Bake Mix or whey protein powder (not soy). This will help
keep the nuts from clumping together.
To make your own cinnamon "sugar", mix 1 tablespoon ground cinnamon with
1/2 cup granular sugar substitute. Keep it in a shaker container that you've
saved from an empty spice.
Edible flowers (sold at specialty food markets) make great, carb-free garnishes for
special desserts.
A serrated knife makes slicing cakes and breads much easier.
If your plastic wrap has stuck to itself, place it in the freezer. It will be easier to peel
after 15 minutes.
If you don't like the feel of raw food on your hands, try this trick when mixing meatloaf: place
all ingredients in a large food storage bag and mix through the bag.
To bring butter to room temperature quickly, cut in 1/2" slices, arrange in a circle
on a plate, and microwave on medium for 15 to 25 seconds.
When baking muffins, fill any unused compartments halfway with warm water. This will
ensure even baking.
Spray your Tupperware with nonstick cooking spray before pouring in tomato-based sauces and there won't be any stains.
Don't throw out all that leftover wine: Freeze into ice cubes for future use in casseroles and sauces.
