                                Hints and Tips for your Low Carb Kitchen

This month, Low Carb Luxury Online Magazine begins a new mini-series of tips sent to us by kitchen-wiz Olivia Morten. Olivia has been a teacher for 16 years, and a dedicated low carb dieter for the last 2 1/2 years. She tells us she's had to learn to keep things running more smoothly than ever to keep her life ordered and has been collecting and innovating little tips and tricks for some time.                Keeping Your Low Carb Kitchen Efficient. . .

  1. Making low carb muffins? Use an ice cream scoop to easily fill muffin tins with the batter.

  2. Transfer those sugar free jellies and jams (not preserves) to a small plastic squeeze bottle. Less mess and no sticky jars or spoons! This will also work great for homemade low carb salad dressings.

  3. Double the amount of favorite low carb casserole recipes you cook. Place half in a freezer container for dinner on a busy day.

  4. An egg slicer works great for slicing fresh mushrooms. Makes even slices quickly.

  5. Use a cooking spray or oil the measuring cup next time you need to measure out maltitol syrup. No more messy process of scraping the cup, as the super-thick syrup slides out easily.

  6. An empty salt shaker makes a great container to shake low carb thickeners like xanthan gum, guar gum, arrowroot, and not/Starch into stews, puddings, and gravies.

  7. To save time when making meatloaf, use bottled Italian Dressing. (Make sure it's a zero carb one!) The herbs and spices are built right in so everything goes together faster.

  8. You can cut up canned tomatoes quickly by snipping them right in the can with kitchen shears.

  9. When a recipe calls for sifting, it works just as well to put all dry ingredients in the mixing bowl and stir with a whisk.

  10. To crush walnuts, pecans, macadamias, or peanuts quickly and easily without all the fuss, place them in a self-sealing plastic bag (like a Zip-Loc bag) and roll with a rolling pin. Don't have a rolling pin? Use a wine bottle, or a big glass DaVinci Syrup bottle.

  11. Add marinated low carb vegetable salads to your next dinner party. They can be prepared in advance and chilled until serving time — great for the busy cook!

  12. Foil-line pans for baking low carb protein bars. Once the bars have cooled, you can lift the foil right out and cut the bars cleanly. Reynolds now makes a No-Stick Foil, and this works even better. There's an added bonus: The pans will need only a quick rinse and dry.

  13. Making low carb cookies? If you run out of cookie sheets while baking, spoon the remaining cookie dough on large sheets of lightly greased aluminum foil. When a cookie sheet becomes free, rinse it with cold water to cool, shake off excess water and lay the foil with the cookie dough right on the sheet. Again, if you have the Reynolds new No-Stick Foil, you won't even have to grease them.

  14. For best results and greater volume when making whipped cream, chill both the mixing bowl and the beaters. The colder the cream the better, too! (And add your sweetener — usually Splenda — to cream ahead of time, keeping sweetened cream refrigerated until ready to whip.)

  15. To determine whether an egg is fresh, immerse it in a pan of cool, salted water. If it sinks, it is fresh. If it rises to the surface, throw it away.

  16. To keep the shell of a hard-boiled egg from cracking, add a heaping teaspoon of salt to the boiling water.

  17. For best results and greater volume when whipping egg whites, make sure they are at room temperature.

  18. We low carb folk eat a lot of cheese, so buying in bulk can be a big money saver. Bulk cheese will keep longer when it's wrapped in a paper towel dampened with vinegar and placed in a sealed plastic bag. The vinegar will inhibit mold growth. Re-moisten the paper towel every few days, as needed.

  19. When a recipe calls for adding oil, garlic, and onions to a pan, always add garlic last. This keeps it from burning and tasting bitter.
