Readers' Holiday Recipes
Welcome to Part Four of our Readers' Holiday Recipes area. This is the final installment, and we bring you some really excellent main dishes to serve during this festive season of guests and dinner parties. Or just treat your own family!

Bacon Mushroom Chicken
  • 4 tablespoons butter, melted
  • 4 bone-in chicken breast halves
  • 1 1/2 teaspoon seasoning salt
  • 1 clove garlic, crushed
  • 4 thick slices bacon
  • 1 cup mushrooms, halved
  • 1/2 cup heavy cream
Bacon Mushroom Chicken Preheat oven to 350F (175C.)

Pour melted butter into a 9x13 inch baking dish. Add chicken, skin side down; sprinkle with seasoning salt and garlic. Turn chicken over, season, and lay bacon strips on top. Sprinkle with mushrooms.

Bake in preheated oven for 45 minutes to 60 minutes, or until chicken is no longer pink and juices run clear.

Remove chicken, bacon and mushrooms to a platter and keep warm. Pour juices from baking dish into a small saucepan and whisk together with cream over low heat until thickened. Pour sauce over chicken and serve warm.

Makes 4 servings. Approximately 3.1 effective grams of carbohydrate per serving.





Roasted Pork Tenderloin with Almonds

  • 1 c. roasted unsalted almonds
  • 2 hot red peppers, or red pepper flakes to taste
  • 4 T. butter
  • 2 Pork Tenderloins, 1-1 lbs. each
  • Salt
  • Freshly ground black pepper
For the Sauce:
  • 6 T. white wine vinegar
  • Juice of 1 lemon
  • Juice of 1 lime
  • 1 tsp. ground cumin
  • 3/4 lb. butter
Preheat oven to 400F.

Roasted Pork Tenderloin with Almonds Chop almonds to coarse consistency (may use food processor, or purchase pre-chopped ones.) Seed and chop peppers fine.

Brown tenderloins in melted butter until well browned. Remove from skillet and pat on almond/pepper mixture. (Reserve the rest of the almond mixture for sauce.) Season with salt, pepper and return to skillet.

Place in oven and roast 30-35 mins (to 160.) Remove and let stand while preparing sauce.

For sauce, place vinegar, juices, almond mixture, and cumin in pan and boil down until liquid is nearly evaporated. Add any pan juices and boil down briefly. Whisk in butter, piece by piece over very low heat. Butter should stay in suspension.

Serves 6 — 1.3 effective grams of carbohydrate per serving.




Neil's Perfect Rib Roast
  • 1 (3-rib) standing rib roast (7 pounds), the first cut, aged if possible, set at room temperature for up to 3 hours, and tied
  • Salt
  • Ground black pepper
Neil's Perfect Rib Roast Adjust oven rack to low position and preheat oven to 200 degrees F. Heat a large roasting pan over 2 burners set at medium-high heat. Place roast in hot pan and sear on all sides until nicely browned and about 1/2 cup of fat has rendered, 6 to 8 minutes.

Remove roast from pan. Set a wire rack in pan; set roast on rack. Generously season meat with salt and pepper.

Place roast in oven and roast until a meat thermometer registers 130F for medium-rare, about 3 1/2 hours. If roast is done sooner than you expect, simply turn oven as low as possible (preferably 150F to 170F) and let stand until ready to serve.

Transfer roast to a cutting board, with rib bones perpendicular to board. Using a carving fork to hold roast in place, cut along rib bones to sever meat from bones. Set roast cut side down and carve meat across grain into 3/4 to 1-inch-thick slices. Serve immediately.

Serves 6 to 8. — 0 carbs per serving.
