TLC Barbecued Beans

These are not like the barbecued beans we used to enjoy, but I couldn't think of
a better name!
Green Beans
  • 4 cups cooked green beans (2 cans, 1 liter)
  • 8 slices crumbled cooked bacon (about 1.5 oz or 40 gm)
  • 1/2 cup TLC Barbecue Sauce (120 ml)
  • 1/4 cup chopped onion (1.25 oz or 35 gm)
Mix together and bake uncovered at 350F (180C) for 45 minutes.

NUTRITIONAL INFO: 4 1-cup servings: 100 calories, 5g fat, 9 carbs (3 gm fiber), 5 g protein each. (TLC BBQ sauce has just 6 calories and 1 carb per Tb. Adjust as needed if substituting.)

* Recipe Note: I've been known to mix this up and put it in the cooler in a big plastic bag. I then put the pre-mix back in the empty bean cans when I'm ready to cook. The cans can be placed right on the edge of a grill to heat through, when cooking out or camping, and there's no mess afterwards! Just stir them occasionally, and move them around if needed - don't let them get so hot that they bubble, spatter, and possibly burn the cook or bystanders.

TLC Broccoli Bacon Salad

TLC Broccoli Bacon Salad
  • 1 cup mayonnaise (240 ml)
  • 2 Tablespoons white vinegar (30 ml)
  • 1 Tablespoon Splenda Granular (15 ml)
  • 1 teaspoon salt (5 ml)
  • 1/2 teaspoon black pepper (2.5 ml)
  • 1 head raw broccoli (approximately 10 oz. or 280 gm)
  • 8 oz. shredded cheddar cheese (225 gm)
  • 8 oz. cooked crumbled bacon (225 gm)
Whisk together mayonnaise, vinegar, SplendaT, salt, and pepper. Chop broccoli into small pieces and add to dressing. Just before serving, stir in the bacon and cheese.

NUTRITION INFO: 8 servings: 440 calories, 40 g fat (7 g saturated), 3 g carbohydrate (1 g fiber), 16 g protein, each.

TLC Creamy Cole Slaw

  • 1/2 a small zucchini, grated (4 oz., 115 gm, or 3/4 cup, 180 ml)
  • 2 Tablespoons finely grated sweet red pepper (30 ml)
  • 1 Tablespoon finely grated onion (15 ml)
  • 1/2 head shredded cabbage
    (10 oz. - 280 gm or about 5 cups - 1200 ml)
    [I like to use Napa for a milder flavor, but regular green cabbage is traditional]
  • 1 teaspoon salt (5 ml)
  • 1 teaspoon black pepper (5 ml)
  • 1 1/2 cups mayonnaise (360 ml)
  • 2 Tablespoons white vinegar (30 ml)
  • 2 Tablespoons Splenda Granular (30 ml)
  • 2 Tablespoons sour cream (30 ml)
TLC Creamy Cole Slaw Toss vegetables together lightly. Whisk remaining ingredients together and toss over vegetables.

NUTRITION INFO: 8 servings: 320 calories, 34 g fat (4 g saturated), 2 g carbohydrate, each. You may substitute a sixteen-ounce bag of coleslaw or broccoli slaw mix for all of the listed vegetables, with almost identical net counts. (I like the fresh onions and peppers in mine, so for me the extra work is worth it - usually.)
