Welcome to another issue of the Low Carb Luxury Newsletter!

We know it's only been a week since our last issue, but we're catching up from the delay caused when I broke my foot. (I'm doing lots better!)

As I write this, I can hear neighborhood lawnmowers running, and I can see crocus peeking up in the garden. Could Spring finally be here to stay?

Having great low-carb options at-the-ready is sometimes nothing short of critical! Our lives get more hectic all the time (mine sure does!) and taking the time to make even a protein shake is often difficult. So when Atkins Ready to Drink Shakes were introduced last Spring, we were delighted to find them delicious as well as handy. (See our review of them done 3/16/2001.)

Atkins Ready-To-Drink Shakes Since the time of our first review (and it's been over a year now), they have become a necessary part of our week — and even moreso when we travel. Also in the last year, we've found more and more convenience stores keeping them "on ice" on the road. The clerks tell us they're popular. No surprise to us. At only 2 grams of bioavailable carbs per 11-oz. can and a refreshing and delicious taste, these are sure to please most low-carbers. Atkins Ready-To-Drink Shakes

Sweetened with Splenda and extra creamy, they also make great ingredients in creamy desserts. Joy, one of our group members, uses the shakes all the time in her baking and dessert making, and suggested we share some of her tricks with you. For example, when she makes Peanut Butter Chocolate Fudge, she uses 1/4 cup Atkins Chocolate Ready-To-Drink Shake in place of the 1/4 cup cream called for. It comes out great. And in our Italian Cream Pudding, instead of using 3 cups of cream, she uses 2 cups cream, 1 cup Atkins Vanilla Ready-To-Drink Shake. Joy changes Cherry Cheesecake to Strawberry Cheesecake, by using Strawberry Jell-O, and instead of 1 1/2 cups heavy cream, uses 3/4 cup heavy cream, and 3/4 cup Atkins Strawberry Ready-To-Drink Shake. It's convenient and lessens the carbs in many recipes.
