Welcome to Low Carb Luxury Magazine's Special Interest Edition: Cheesecake!

The earliest history of the art of making perfect cheesecake is lost, but we know that cheesecake was already a popular dish in ancient Greece. With the Roman conquest of Greece, the secret fell into Roman hands. The Roman versions were often used as an offering at their temples to their gods. Small cheesecakes were served to athletes during the first Olympic games held in 776 B.C. on the Isle of Delos.

Cheesecake is a natural for us low-carbers. Those on low-fat diets either have to stay away from it entirely, or settle for some "fake-cheese" version, but for us, substituting a legal sweetener for the sugar is all it takes to make most cheesecake recipes low-carb and delicious. Oh yes! And we've also included one of our favorite "savory" main-dish cheesecakes.

Since the beginnings of Low Carb Luxury, we've been collecting cheesecake recipes and many of them have been sent to us. So here are our favorites of those sent to us and those we developed.
